MASALA CHIPS 😋 🇰🇪

PROPER INDO-KENYAN STYLE MASALA CHIPS FROM THE WHITE SANDS OF MOMBASA

Hot & Spicy Masala coated Chips/Fries easily made and taste great every time. Sharing this special recipe hurts! but these are worth it. Try them out and let me know what you think ? :)

MASALA INGREDIENTS:

YIELD: APPROX 1 CUP OF MASALA OR ENOUGH FOR 600G OF CHIPS

  • 1 cup Tomato Pasata

  • 1/2 cup Tomato Ketchup

  • 1/4 Cup Chopped White Onion

  • 2-3 Crushed Garlic Cloves

  • 2 tbsp kasturi methi (dried fenugreek leaves)

  • 2 Chopped Green Chillis

  • 1 Julienned Chopped Red Chilli (chopped into matchsticks 🙄)

  • Handful of Coriander/Cilantro

  • Juice of 1/2 a Lemon

  • 1/2 TSP Salt

  • 1/2 TSP Chilli Powder

  • 1/4 TSP Turmeric Powder

  • 2 tbsp vegetable / cooking oil


Tip: Be Sure to take out a bit of the masala and have it as a Dipping Sauce on the Side ;)


METHOD:

  • drop the vegetable oil into a hot shallow pan

  • add the chopped onion, cook them down until translucent (approx 3 minutes)

  • lower the heat and throw in the crushed garlic and mix in with the onions

  • now add the following and mix in well to form the 'masala base'

salt

turmeric powder

chilli powder

  • now crush the kasturi mehti between your palms as in the video and sprinkle over the pan. We do this to break up the stringy/twiggy texture.

  • add the tomato pasata and again, mix in well. Cook out the sourness for 2-3 minutes

  • now add the tomato ketchup, stir in and cook for 2 minutes. Add a little oil if it looks to dry. The video is great to check what consistency you're looking for

ALMOST THERE...

  • throw in following and stir in well:

chopped green chillis

fresh coriander/cilantro

red chilli matchsticks

  • finally, squeeze half a lemon over the masala and stir


THE MASALA IS READY!!


CHIPS:

Now the masala is done all you have to do is add your hot chips to the pan and fold in until they are coated in the hot, sticky, spicy masala.
